If you know me in the winter time in Georgia, I’m covered up with layers like an Eskimo in Alaska! Not weathering cold temps well, I turn to warm foods like this hearty beef stew to keep me nice and toasty. With minimal preparation and less than 380 calories per serving, this "set it and forget it" in a slow cooker Irish Beef Stew is perfect for my waistline, cold nature and the blustery conditions outside this wintry weekend.

My secret ingredient to tomato based red sauce is cayenne pepper. Add a pinch or more depending on your taste buds and those you're serving. I'm not a fan of hot and spicy foods, but I love red cayenne pepper in any red sauce for the depth of flavor. Combine it with brown sugar as in this recipe for a sweet and spicy balance that creates a savory effect. You'll love it!

Italian cooking is one of my specialties... surprising for someone that looks more Swedish than Italian right? ;) This lasagna is so popular that it's the one dish that is scarfed up immediately by all those around with no left overs!
